Three Tiered Buttercream Wedding Cake

I love ‘Buttercream’ and this should have been a very straightforward cake…sadly, it was not!

First tier – red velvet
Second Tier – Banana
Third Tier – Zesty Lemon

To begin with, we had an unusually humid ‘spring’ day in Bowral on the Friday…the piping day! (one day before delivery)

Secondly, I tried a new banana cake recipe…it was delicious, but ever so moist, and I torted with buttercream infused with lemon zest….here lies my mistake, as I feel the zest from the lemon caused extra moisture!

Anyway, the ruffles in this cake caused me stress! I had to pipe them twice, as the first set basically slid downwards after 4 hours….oh,yes, can you imagine me angst!

So, I swapped to a smaller petal tip and stiffer buttercream mix, and won the battle…yay!

Does anyone out there feel my pain? This cake nearly broke me!
