This was my first ruffle cake. I mainly get asked for novelty cakes and was itching to try one of these. I love the jade colour, so bright and vibrant.

very nice cake. I’d like to try one of these as well. Do you mind me asking – did you use straight fondant for the ruffles? or did you add any sort of stiffening agent – like gumpaste or tylose?

Thanks everyone. For jiffy0127, I just used straight fondant. I didn’t want to add tylose as I didn’t think it would be a nice texture while eating the cake. For any layers that did go a bit floppy, I used cocktail sticks to prop them up until they were firm.
