Katherine is a unique and special personality who does not like surprises. Her mum and I agreed that the cake had to represent her and this is the design that I came up with. Based on her reaction to the cake. I think mum and I are forgiven for making this one a surprise! She is a total chocoholic so her chocolate sponge cakes were layered with dark chocolate buttercream and wrapped in milk chocolate ganache before being encased in Massa Ticcino Tropic and gumpaste accents. The whole family are none too keen on sugarpaste. The Massa enabled me to keep the covering really thin plus its taste yielded a few convertees – OK so that is apparently not a word but hey, you know what I mean :)
