Hi all,

hope you guys are well. It’s been a madly busy period for me so I haven’t been interacting very much, but I’m hoping it’ll quiet down soon and I’ll be able to catch up on everything I’ve missed here!

This was yesterday’s adventure. I had one day to make a dessert table for my other half, featuring no refined sugars, and limited wheat and dairy. We’re both reformed sugar addicts who used to think a jar of nutella was a perfectly acceptable dinner (lol), but he’s much better than I am now and doesn’t like to eat anything with white sugar at all. It was fun putting together everything, but I was so short of time and somehow ended up forgetting to eat anything all day, and the kitchen was a complete tip… but the cakes turned out well thankfully. I used a naturally sweetened ganache alternative I made to cover a cake smoothly for the first time as well as just piping truffles (I was most proud of that one :) ), I would have liked to try smooth-icing with the coconut cream too but ran out of time. I thought this might be interesting to the world of cake decorators, that high-quality finishes are still possible in cakes for quite restricted diets, without using white sugar.
