One of my more popular cakes I do in the dessert line. 2-layer vanilla cake with a layer of buttercream icing in between tiers with pineapple, as not to be too sweet.
A thin coat or crumb coat of BC icing on outside of cake. more pineapple on top after taking fork and poking holes so juice can run in, just as you would do for center layer***
Then whipping cream all over top and sides. Coconut on top and sides, topped off with mar chino cherries!!
Just a very light layered flavor of fruit and creamy goodness, while being extremely moist!
