Caramel Coconut cupcakes
These were inspired by the Samoas girl scout cookies.
Every recipe I saw online used a chocolate cupcake base, I LOVE chocolate, but when I eat these cookies I really like the cookie part of it. So, I decided to play around and come up with my own recipe.
I started with a buttermilk cupcake recipe, added toasted coconut. Toped them with caramel icing, toasted coconut and milk chocolate drizzle, YUM!
