Fondant is great for making edible figures and decorating cakes in general. It is very popular in the west and is soon becoming a part of every designer cake in India as well. My clients generally love my fondant cakes but some are not too fond of fondant.

So, specially for them introducing the ‘FONCREAM CAKES’. These cakes are a perfect blend of the cream cakes and have usage of fondant decorations as well. Their covering is not of fondant essentially.

This cake was for a two year old little girl whose mom wanted a special crown cake for her princess. The cake base is unique. Its an eggless cake. Hence have used an eggless chocolate sponge as the base. As a contrast, I have used a strawberry cream in between the layers and also to cover the cake.

As I always say, every cake is special and so was this one. The making of the crown was amazing and a new experience all together. But even the cream part was fun. Whipped the cream till it became a cluster of clouds. Poured in a tinge of pink and then slowly the cloud of cream took its color. Just the blending of the white and pink was such a treat to the eye. It looked like strawberry ice cream when it was done. Yummy..!!

There are these minute things in cake making which seem so trivial but are such a pleasure to look at. Blending color in cream being one of them. Yes, and also the cake rising in the oven!! Oh, the list is endless. :-)

So, an eggless chocolate cake with strawberry frosting and a princess crown on top. Wish you a wonderful birthday little girl.
