My niece froze two 8 inch cakes from her wedding. She kept them in the freezer for two year and used the first one this Christmas for her Christmas Cake to make sure that the cake was still good and will be using the other one in April for the Christening of her first baby boy!!! Malta was an English colony for almost 200 years and we have adopted many English traditions, this is one of them!
