Well, Karen, you learn something new every day!! Firstly, I love Silikomart’s products. I won one of there lace mats and cake lace powder. It’s exceptional. I had to Google there tortaflex mold kit. Quite ingenious. My Mom use to do this, but used a cheesecake pan with removable bottom. I remember her putting a plate on the top that fit inside the pan. So when she flipped it over, obviously, the plate became the bottom.
Mom made a sponge cake for the cake. As for the mousse…can’t remember that, accept know it was made from scratch. I do remember it being light and airy.
