White ganache is extremely sweet. I used a while ago, and wouldn’t again. I’ve covered lots of chocolate cakes with white bc and then white fondant…the dark chocolate never shows through. If your cake is firm, and cold…no worries putting in your dowels/cake straws. I’ve dowelled before adding my fondant and after…
