I find that some cake mixes are too thin…and the balls will just float. That’s why I recommend a thinker batter such as Madeira.
As stated….I just weigh the eggs…..and then that determines the weight of butter, sugar and self raising flour that I use. Half the weight of the eggs determines the amount of plain flour I use. So for instance …if I make a 4 egg mix….and the eggs weigh 250g….then I use 250g butter, 250g sugar, 250g self raising flour and 125g plain flour.
The amount of batter you need obviously depends on the size of tin that you use. x
