re: Cakeicer (Shirley)

Good morning, sweet Shirley! Thank you for your kind comment on my poor geode cake. I used the Craftsy tutorial that you recommended and it was a lot easier than I expected. No, I didn’t have time to grow crystals that large. I bought rock candy from a restaurant with an old country store in the front. I do want to try growing them myself…should start that today!

Yes, the cake was frosted in buttercream and covered with LMF. I have had the problem before, the frosting just wants to fall off the cake. It did the same without the fondant covering. After talking with a lot of cake friends on this and other sites, it seems Goreti came up with the answer. I had been using homemade cake release – one part Crisco, one part flour and one part vegetable oil – in generous amounts. She seemed to think the oil in the mixture may have been the problem. It sounded right when she mentioned it because I have not always had the problem. When I made these last two cakes, the large baby shower cake, which was covered in LMF and the small water color cake, which was buttercream only, I used only enough Crisco on the pans to adhere the parchment paper and lined the pans bottom and sides. I also made my buttercream a lot thicker. This time there was not even a hint of sagging or bulging and it was a lot warmer than when I made the geode cake in early March. I don’t know for sure if it was the culprit, but I will no longer be using homemade cake release! Back to Crisco and flour for me (and parchment paper) and crossed fingers!
