My third wedding cake – a huge 4 tier pink ombre cake. The cake was airbrushed outside to give a smooth finish, and the inside was coloured 3 shades of pink in each tier. I make a huge sugar open peony to decorate. I had nightmares over this cake for weeks but it worked out really well and the whole bridal party was thrilled.

(BTW, word of advice for anyone making wedding cakes – if the bride says she’s getting someone to make the cake stand – make sure they can actually make it level. The huge wooden stand her father had made was 4 cm higher on one side than the other, so we wasted a lot of time and effort trying to wedge stuff underneath.)
