This is the mini cake I made for my special needs son who just turned one on the 6th of August. It was important for me to incorporate boxing gloves to represent the fight that he has fought over the past year to be here on this earth with us. He has a fatal diagnosis that doctors told us he would not live through the week he was born. We see everyday with him as a blessing. The medal on the cake represents that he is our #1 fighter and of course also his age. :) It is a basic marble cake with chocolate filling.
