Sunshine Cake

For a “you are my sunshine” themed 1st birthday party. When my client initially contacted me a few weeks ago and told me the theme of her party, this was the first idea that popped into my head. I came up with a few other ideas, but she chose this one. The cake is a vegan banana cake with vanilla filling. I also made 5 dozen cupcakes to accompany this cake—2 dozen lemon, 2 dozen strawberry and 1 dozen gluten-free lemon.
