Red Velvet Whoopie Pies

This is my first attempt at Whoopie pies. They are like a really ‘confused cupcake’ in that the filling/icing is sandwiched between two cake like cookies. These are red velvet filled with a vanilla buttercream. The decos are piped white chocolate. The second picture shows the ones that I filled with a marshmallow filling.
