The idea behind this cake was to create a cake, which was decorated using only royal icing and pastillage and being able to create shapes, which I would normally make by modelling with sugarpaste.
I entered Cake International in London to see what comments the judges had to make and I got Bronze for my cake and I also got some great feedback and advice.
I won’t always work with Royal Icing but I would be happy to make royal iced cakes if someone asks for it.
