My second wedding cake creation… CANNOLI N’ ROSES (can you tell I’m a huge Guns N’ Roses fan who will use any excuse at all to do a play on anything regarding the band?)
This is white almond cake with cannoli cream filling. Since I grew up in Bensonhurst, Brooklyn, I am no stranger to cannoli from some of the best Italian bakeries in existence! But I never was asked to make cannoli cream for anything before. So this was extra fun!!!! The top tier is covered in buttercream, while bottom tier is surrounded by white chocolate ganache. I absolutely ADORE the antique white look of naked white choc ganache. Adorned with handmade fondant roses.
