I’ve no idea if anyone outside the UK would know what Only Fools & Horses is, but it’s probably the most popular British sitcom of all time – the main character drives a yellow three-wheeler van. My father-in-law is a massive fan of it and watches re-runs of it all the time, so I decided to make him an Only Fools & Horses themed cake for his birthday!

This was my first go at sculpting/carving a cake. I cut a side-profile template out of paper and used that as a guide. I also googled the dimensions of a three-wheeler van so I could cut my cake board to the right proportions.

The van was vanilla cake and the main cake was lemon cake with Swiss meringue buttercream.

There were lots of little details I wanted to add to the cake, but I had a really busy week and totally ran out of time. I stuck the happy birthday sign on moments before we left in the car (the sign is copied from the style of the sign in the title credits of the TV programme) and it slipped down on one side during the hour long journey to my husbands parents house and stuck like that – that really annoyed me! But it was stuck fast so there was nothing I could do about it!
