My ‘Ruby Cardinal Christmas’ Cake won first prize in the traditional category last night at the Dublin Guild Christmas party competition. It is sitting proud on the buffet in my kitchen now, awaiting to be cut on Christmas day. Two tiers of rich fruit cake.
The cardinal is made from gumpaste with two Styrofoam balls inserted to make it lighter so it would perch on the berry twig. The Christmas Roses are made from rice/wafer paper, dusted with petal dust and then veining added with petal dust mixed with alcohol.
