Any white chocolate when melted looks yellow. After you stir it vigorously for several minutes, it becomes white. As far as the chocolate, make sure it has a high fat content. I bought pricey white chocolate, and it was a disaster. Great taste, not enough fat to melt properly. I just buy a cheapie grocery store brand of white chocolate. It works great.

No, Wilton “look” white, but when melted, still turn yellow.

June, Wilton has “White” candy melts, which do have an ivory tinge and they have “Bright White” candy melts, which are indeed bright white. I use them all the time to make my modeling chocolate because when I color it (usually flesh tone) , the color is more true. Christine, the Wilton Bright White is the only white chocolate that I have seen that is really white.

Unfortunately, Sandra, you cannot get bright white candy melts here in my part of Canada. I think it’s pretty much exclusive to USA. My Michael’s doesn’t sell them. Hopefully, Christine can find them.

I do not know how long they have been around (Bright White), but I first saw them maybe a year ago and believe they are relatively new. Our Walmart carries them and I have also bought them at Michael’s.

Using Candy Melts for drip cakes is fun!

Merckens also have Bright White Candy Melts that taste much better than Wilton – I don’t know about the price in your area, though. They are more sensitive to high temperature so you need to be really careful when you melt them.
