This was made for my sister for our Christmas dinner. My mum and her couldn’t get enough of my Purple Yam flavoured cake. This time I made it extra special by adding one of their favourite flavour, COCONUT! I have added a hint of coconut cream in my purple yam sponge cake batter with Purple Yam Coconut Cream-cheese Frosting and sweet shredded young coconut filling. It was a hit!!!
NB: sorry for the difference in colour, it’s the lighting in my kitchen :)
