Banana Cake

I’ve never made cupcakes with this recipe but here’s what I use:

2 1/4 C flour
1 2/3 C sugar
1 1/4 t baking pwd.
1 1/4 t baking soda
2/3 C shortening
2/3 C buttermilk
1 1/4 C mashed banana
3 eggs

Measure all ingredient in lg. bowl. Blend 1/2 min. on low & then 3 min. on high speed. Pour into greased pan(s). Bake @ 350° for 35 – 50 min. depending on pan(s) size. (Obviously you would change the time and possibly the temp. for cupcakes.)

Thank you so much – I will do a “test drive” with this recipe and make cupcakes with it. The time in the oven will be cosiiderably less, but I bet they’ll be delicious.
