Topic tags/keywords: macaroons

I’m not sure if this is the right place for this question or if anyone can help me but I’ll give it a go.
I have been making macaroons…a first for me…..and even though they are delicious they do not have the beautiful shine that commercial ones have. Any idea why?

Try putting the macarons (after assembly) in the fridge for a couple of hours or in the freezer for about an hour. They will have a shine when they come out. Commercial macarons are almost always frozen before they get sold, mainly for efficiency.
