Good evening all, I need some help. I am in love with the trendy mirror glaze couture cake style. After deep research, I have discover that they are entremet cakes. I have used the mirror glaze before and love the way it looks. I have purchases the eclipse mold from Silikomart to make this style cake. I tried to find a pasty/ cookbook for this style of cake/mousse filled cakes to purchase but they all seem to be in French. Does anyone know where I may fine one?
