Mirror Glaze Cakes

My next project is to learn to do a gelatin mirror glaze cake. I just think they are so pretty, not sure though about the taste or texture. For those who have made these cakes, is there a way to flavor the gelatin glaze? Extracts, seedless jams or oil flavors?

I just literally watched a tutorial on mirror glaze on “mycakeschool.com”. It looks relatively easy to do. Since it’s made with unflavored gelatin, sugar, corn syrup and evaporated milk, it’s petty sweet. You pour the glaze over an already flavoured bc covered cake that’s been well chilled.

I have seen several videos and tutorials, recipes etc. But I am wondering if you could flavor the glaze in something that will compliment the color of the glaze. Say a berry flavor to go with a lavender or purple glaze, orange flavor to go with a yellow glaze etc.

Hmmm…I’m wonder if it might change the integrity of the glaze? The tutorial does add food colouring, so I suppose if you flavoured the evaporated milk, it would probably be fine. Guess your going to have to experiment and see???

I was wondering about the flavor too…doesn’t sound too appetizing.

I found one recipe for a purple glazed mirror cake. They added 1 Tablespoon seedless blackberry jam. So that tells me you could use other flavor jams with different color glazes. I too thought just the plain glaze recipes sounded pretty bland.

Just wathed this tutorial that incorporates white chocolate & sweetened condensed milk in the glaze.

Sonja even the recipes I have found with white chocolate and sweetened condensed seem to accept fruit based seedless jams. I have seen recipes with Blackberry or Raspberry jam added. They both sound better to me but still not sure I will like the gelatin like texture in my mouth. I guess it must be similar to Jello gelatin. One day I am just going to make one of these cakes and see what the results will be.
