Cake Decorating

Advise please - big hotel cake project

Hi fellow CD’s
I have been asked to recreate a local hotel in cake!!!! I’m a home baker and only make 5-6 novelty cakes a year, so completely out of my depth! Looking for any advise to help me, I have 3 weeks to plan, bake, sculpt, ice, decorate and deliver aggghhhhhhh!!!
The building is 8 stories tall and sits next to a river! I’m guessing I need some sort of structured cake. Is there an easy way to transfer a real building into a cake?

Feeling rather intimidated but keen to prove myself.

o my word that is a very big project if you are not so confident ,could you maybe not do a tiered cake with a small building on .but if you are like me you will challenge yourself and go big . i have not really done anything massive could you not dowel and put board after say every 3rd layer .sorry I cant be more help I cant wait to see it .good luck :)

Thanks Jenny! Dear husband volunteered me to do the cake so feel like I have to go through with it! Dowelling is definitely the way to go but I rather lack artistic skills for the planning part lol!

How exciting…and scary! I recommend taking lots of pictures and measurements if you can so the proportions are right. Look at the hotel with fresh eyes- what do you see first? Is it the sign, an architectural detail, color, awnings, etc? Make sure to include these details first. Anything that can be made of fondant in advance will save you time at the end. Good luck and please post pics of the results!

You can use rice krispies to help with the structure also. I would definitely start the bottom with some solid like that. Snd yes, take pictures of every side of the building.. Start getting your colors ready now.
