Setting up a big outdoor summer wedding cake

I know it’s still winter but I was contacted about making a 6 tier wedding cake this summer and the reception will be outside. Im worried about the cake getting too hot or melting. Is there anyway to rig a huge box around it with ice or something in it to keep it coole then right before wedding they take off the box?

I am sure some structure could be made of keep the cake cool outside, but it would be hidden. Is the venue such that the cake could be kept inside in the air conditioning until they are ready for the reception, then roll it outside?

Is there possibly a cooler room with an A/C available at the venue?

I asked those same questions and there is an a/c cabin but its a little walk from there. She is afraid to move it because its so tall. It would have to be carried the whole way because pathway to where they are having reception is gravel or grass.

If it is not possible to move, ask if anyone has a portable air conditioning unit. I have one for my kitchen, and you could stick a kids pop up play tent over it and shove the airconditioner in through the gap. If poss have a few test runs way beforehand.

that’s an interesting idea Mandy…I’ll have to experiment with that

The only thing you can do for the bride is not to take any other wedding cakes on her wedding day and then box the cake up cold from your cake refrigerator – into a large box that has frozen cold packs in it and is sealed up tight then placed into your air conditioned car. You then park in the shade, bring a good book and keep the car running with the air conditioner on until about an hour before they’re ready to cut it – then display it and leave praying all the way home. You also need to have the bride sign a statement that she will not blame you if something does happen to the cake because of heat – usually this gets them thinking and verbally slaps them upside the head. As you grow in this industry – and learn that there’s no place cold to keep their cake, it’s an outdoor wedding, in August’s heat………………….. you HAVE to say No to her order………… because that day alone will kill the whole year for you. Tension. It’s just not worth any amount of money she could offer you.

Denise that is just what I needed to hear. I was thinking of turning it down just because I was already starting to stress about it but thought I would be a wimp for doing it. Having someone else tell me is just the confirmation I needed. Thanks so much!

I would like to thank you, too, Denise, just in case I ever run into a similar situation. Beautifully stated!
