First wedding cake!

Hello!
I’ve been asked to make my first wedding cake for September 2015 and wondered if anyone had any hints/tips they wouldn’t mind sharing.
It’s a 3-tier cake – bottom tier fruit and the top two sponges. I’m slightly nervous as its my first one and I want to make sure it’s perfect for the couple. Will be putting in lots of practice too.

Hello, I am not sure what kind of hints and tips you are after but I would say first and foremost, take your time – Wedding cakes can be very stressful as you know how important it is to get it perfect so don’t rush it and make sure your crumb coat is flawless before icing the cakes as this will help out massively, it is very difficult to cover flaws in the icing due to the crumb coat not being at its best – also, when stacking the cakes, make sure you use plenty of dowels, better to go over the top than not have enough. If the cake is having decorations on, take your time with these aswell and even do them in advance if you can to give yourself plenty of time and above everything else, enjoy it! It is really nice to deliver a wedding cake and know that your time and effort in creating their cake will always be a part of that couples special day and they will look back on their photos of it fondly. X

I assume you know to cover the fruitcake layer with marzipan (almond paste) or the darkness of the fruit will “leak” through the white icing. Put the marzipan on a few days in advance and allow it to dry before applying top icing. Stick the marzipan to the cake with warmed apricot jam.

It is very nerve wracking with your first wedding cake, the main thing I was worried about was the stability, but most cake decorating books have directions on how to stack cakes and as long as you follow them you’ve hot nothing to worry about there.
Also if you are doing flowers etc make them in advance and make a few spare ones in case of accidents.
If it makes it easier you can always stack the cake when it’s delivered.
