Calling all Italians!@!!! and people in hot countries!
I’m being flown to Tuscany to make a wedding cake in June and i’m having a bit of a panic.
I cant take everything in my suitcase and i need a plan b.
Can anyone recommend me an Italian cake supplier, for boards/boxes/sugarpaste/ganache chocolate etc…. so i can order and deliver it to the home I will be staying in rather than take 5 suitcases lol and ingredients aswell?
I have researched and will change my ganache ratio, but i’ve also heard there is a sugarpaste which is highly recommended under that heat? it begins with MM i think…i can’t seem to find it again and I can’t find it here to test it out
Also as it will be super hot, would you guys be able to recommend me a sugarpaste/ganache or have any advice regarding anything to do with wedding cakes please!
Any advice would be really helpful and appreciated, it’s turning out scarier than i thought

Hi Nuria…I think you may be thinking of Carma Massa Ticcino Tropical fondant/sugarpaste which I’ve read works great under any condition including humidity.
I personally have only used Satin Ice for premade fondant when I cannot make my own Marshmallow fondant and find it also works great under humid conditions.
