Will cream cheese buttercream be ok at room temp??

I have an order next weekend for my red velvet cupcakes. I usually put my cream cheese buttercream on them (cause the combo is SOOO yummy :)..LOL) Anyway I always keep this in the fridge before delivering because of the cream cheese.

My client is going to pick the cupcakes up the day before her event and doe snot have room to refrigerate 60 cupcakes. Do you think the buttercream will be ok at room temp for like 24 hours? I really don’t want to have to do regular buttercream. Not as yummy :)

The cupcakes in my profile/avatar pic there where topped with Cream cheese buttercream. I’m pretty sure they where left out after I placed them for quite a few hours. Supposedly, the high sugar/fat content is suppose to make them shelf stable/food-safe longer, but I am always nervous about it and still try to fit them in the fridge. You might give the client the option of risking it or not?

I use cream cheese buttercream alot, its so yummee I would cover everything in it if I could. I have often brought them with me when visiting family members and they never get put in the fridge and are just as yummee the next day! Nobody has been poisoned yet with them :)

Thanks so much for your input. I actually went to a cake show yesterday and bought Cream Cheese extract. I was thinking of trying that in buttercream instad of the vanilla since my cream cheese buttercream is very similar to my regular buttercream.

But good to know that it can stay out for 24 hours

Tara – I didn’t either until I went to a cake show this weekend and Silver Cloud Estates was there selling all kind of extracts. I will definately let you know how it tastes. I am very anxious to find out too!
