Cake Decorating

more buttercream questions...

so ive got a buttercream recipe that calls for meringue powder. does anyone know how long it lasts in the fridge? Ive got a batch I made last Thursday, can I use it for a cake for Saturday or should I make a new batch? (just over a week old!)

Yes, Karen you will be fine. I’ve kept my bc up to a month in the fridge. I usually freeze my leftover bc unless I have a few cake projects. It will last 5-6 mnths in the freezer. Thaws quickly.

Ahhh….ashame Karen. Not sick of your questions at all…silly girl.. Honestly, If it’s a 50/50 butter & shortening icing, it can last up to 2 mnths in the fridge. When I make icing, I make a huge batch, don’t add flavouring to it. Remove half of the icing, adding flavour only to what I’m going to use, freezing the other half. I add the flavouring to the frozen icing once thawed.
