Cake Decorating

Metre high cake.

Hi there has anyone had to make a wedding cake 1 metre high. I have just had a client ring up, who wants a cake for 100 people and I calculated and told her it would be about 50 to 60 cm tall. She then told me that she wants one taller but it is impossible for me to get any dummies to fill in the tiers as she wants it in 6 days time, and I have to order them from abroad.

Any suggestions on what to do, and also how to deal with a cake 1 metre high. I did suggest that each layer could be doubled to bring the height up, but obviously this will cost quite a bit more.

Sitting here waiting for any help as she is going to ring back tonight or tomorrow. All suggestions gratefully received.

If height is truly the issue here, why not suggest some open pillars between the tiers. It will add a lot of height without adding cake. Filling the space between the tiers with fresh flowers will look beautiful and won’t add extra work on you, apart from the pillar structure.

Otherwise, there’s no way to get more cake without paying for more cake! ;-)

Thanks for that, but they like the stacked effect. Also I am in France and won’t be able to get pillars in time, but I did think of using other things such as glasses etc, but they want stacked.

I agree… Use pillars to gain height and I’d make the cakes double barrel as well… If she’s prepared to pay… For what she’s wanting, she should be prepared to pay accordingly … I like Jennifer’s idea with flower fillers :) what is the design theme? Floral?

Yes she wants a stacked cake with a fresh flower spiral around it. The cake has to have a certain amount of detail piped onto it, but luckily no flowers need to be made by me. Will have to make sure she is aware of how to put fresh flowers onto/into a cake.

And putting dummies down the cake and cover all together with fondant? I mean dummie + cake and covered toguether with the icing? This way you make them higher. It´s an idea.

A stacked cake one meter high to serve 100?? no dummies…no way! you need to tell your client that’s dynamically impossible:)

I see you live in France and you can’t get dummies in time to do the cake.. in the Us you can just go to the craft store and they sell styrofoam circles that you could use like a dummie

Not wishing to put a dark cloud over this, but six days time is very short notice. I would hope you have got the total amount up front for this cake before you start to work on it?? Don’t want you to find someone’s wasting your time after all that effort xxx I’m sure you won’t let yourself be put into that situation though xxx On a positive note I agree using columns or even vases between the layers with fresh or fondant flowers could add height xxx

You could make dummies out of rice crispie treats (puffed rice and marshmallows). That would allow the extra height/tiers and give the visual effect. :)
