So I woke up at 7am today and feeling all industrious, I decided to bake some cupcakes… I made 2 batches to bake at once, trying two different methods for beating the batter to see what difference it makes, and these new no cake pan required cases I just got. 25 minutes later and the cakes are flat… I’d forgotten and used plain flour instead of my preferred self raising sponge variety (in my defence they’re in identical jars on my counter)… And what’s more, they’re funny shapes (so much for no muffin pan required) and the cases are peeling on a few… Sigh

I now have lots of strangely shaped undercooked lemon biscuits instead of cupcakes. How does this manage to happen with the recipes I’ve used without problems for years? I think I need to go back to bed :/

oh no… walk away… have a coffee or something!!!
I wrecked a cake batch the other week… I was tripling the amounts for a large batch… and miscounted somewhere. (Usually very good with my math.)
On the bright side, I am sure lemon biscuits taste great! ♥

Thank you ladies <3 i just needed to get it off my chest. On the plus side I’ve already eaten 3 in the name of destroying the evidence (you’re right Julez they taste quite nice). Going to try again… Wish me luck!

U know they are labelled! I was staring right at the words “PLAIN FLOUR” the whole time but it didn’t register! D’oh! I’ve hidden that jar now so much less chance of me doing it again haha xD

You don’t want to know how many pans of cupcakes I have destroyed!!! No, you really don’t. I still use a pan for those “no pan needed” cases. I just don’t trust them.

That’s what I ended up doing too Donna, baking them in a pan anyway. This time they look a lot better and aren’t peeling, but I’m tired and have had enough of cupcakes altogether for today lol. Unless someone else is baking them for me, in which case I guess they’re ok ;)

Do you find you test and retest the batches following a failure just to be sure they’re ok? I’m having to restrain myself from cutting into one because I made exactly the number I need for the order (that never happens!) and don’t want to make any more… But I’m itching to check! Gah. help!

I have done a few re-test but not many. I finally found the best vanilla cc recipe from the “Cake Paper Party” blog. Those baked up perfectly, for the first time in my life, so no more testing for me. I have also found a 2 new chocolate recipes that work great. I can’t believe – after 3 years I am just now getting the hang of cc! hahaha!

What if you cut a bit off the top before you decorate them – just to taste? The decorations would hide it. Sneaky!
