Tres leches wedding cake

I have been asked to make a tres leches cake for a wedding. The bride wants a 3 tier cake – however I’m afraid that a tres leches cake is too moist and soft for stacking and covering with fondant. I could cover it with buttercream but the stacking still concerns me. Any suggestions? Also, if you have a good recipe I would appreciate a copy. Many thanks.

Have you looked into the stress free support system? Peggy Does Cake told me about it and I love it. It is a metal plate system so basically all the weight is on the metal plates. It will definitely work for two tiers. I know use can use for three tiers but if you are concerned about the softness the middle tier may not be able to hold the top.

You could always also get a floating cake stand. So in essence the cakes are not stacked on each other.

Thank you – I like the idea of using a floating cake stand – that would eliminate my great “fear” of having the tiers sink into each other- yikes!!!

I sent the bride an e-mail suggesting it – hopefully, she’ll like the idea!

As long as you dowel properly, you can stack any cake. I have had heavy rich fruit cakes as a top tier before and the dowels support the weight.

I decided not to do it. – it would be too much of a challenge and I couldn’t take the risk with a wedding cake. I offered. To make 1/2 sheet of tres leches to serve the guests and a dummy cake for the pictures. Bride is considering it and I feel better- :)))

I made a tres leches cake two years ago—disaster! The fondant is too heavy for the cake. The cake is literally soaked thereby making it too soft for fondant but perfect for buttercream. So, I don’t offer it too often—unless it’s a small cake because my buttercream smoothing skills are horrid!
