I made this cake for a couple that were celebrating their engagement. They love sailing and also scuba diving but wanted an elegant cake. I kept the coral and reeds white and added hologram white luster to them so they sparkle (which you can’t see in the photo) to keep the cake looking elegant. I really enjoyed making this cake and the response from the clients was amazing and reminded me of why I love making cakes so much.

Once upon a time

This brief for this cake was “once upon a time” and with that theme i could have taken the cake in any direction but after some more questions i found out that it was a costume party and that Sharon ( the birthday girl) was going as the evil queen. She wanted her cake to represent a fairy tale but not look like it was made for a child. She also wanted the cake to look elegant which i think i achieved and i also gave it a bit of an edgy wicked feel to suit the evil queen. Thanks for looking :-)

The second photo was just for fun and i love any chance i get to practice taking photos haha but i think it gives the cake a real gothic feel. Id love to know what you think :-)

Oh and i wish i had taken my camera to the venue, holly smokes!! Imagine a whole venue that matched the cake.
The tables were covered in black satin, with red and silver table runners. The evil queens ring was used as a napkin ring for the satin napkins. The walls were covered with red apples and green leaves and blacktulle. It was incredible and totally not what I was expecting.

My 4 year old daughter came home from Ballet and rans up to me and said “Mum!!, the cake has to be Pink!. Miss Natalie loves Pink, Ok mum, Pink. You got that mum she loves pink!!” haha yeah i think i got it lol

Honestly why why why do i tend to leave things to the last minute. I looked at the clock at 7am in the morning and couldnt beleive my tired weary eyes. Where did the time go i swear ( I may have literally sworn to hehe dont tell anyone ;-) ) it was only 1am when i looked at the clock last. I hadn’t covered a sqaure cake in sooooooo long that i forgot what a pain they can be to cover and now im thinking maybe i do need to finally fork out some cash and go do a course, we’ll see haha.
The top tier is the original design by Inspired By mIchelle, I think? I was just given a pic. The cake in the pic had a puppy dog though and it was a blue cake but still need to give credit where credit is due :-)

P!nk and karaoke ( My Make a Wish Cake)

This cake is inspried by Icing smiles, sugar angels and all the other foundations that provide cakes for critically ill and sick children.

We dont have any of these foundations that service my area in country South Australia but there is me :-)
so here is the story. I hope you enjoy reading it :-) xx

Every cake has a story but this one is a bit Special .

Just under 4 months ago I reached 2000 lovely “Likers” on my page and to celebrate I was going to have a competition but decided against it when I decided some petal cutters or new bakeware etc for someone wasn’t really going to be remembered and I wanted to do something that was remembered . This is when I decided I was going to find someone special to donate a cake to instead. It was just going to be my gift to them on their birthday but who??? Lol. That’s when my mum suggested to get in contact with the Make A Wish foundation, Riverland Branch. So that’s exactly what I did.

A few months past and I thought they forgot about me haha but I finally got a call saying they have found someone for me, Yay!! I was so excited and today I got to deliver the cake I made especially for Little Caity who turned 8. Caity has a disease that I can’t even pronounce let alone comprehend and her disease is ongoing and something she will live with for her whole life but today when she saw her cake she was just like any other excited little girl on her birthday. The look on her face when I came around the corner with her cake was priceless and when she said “How did you know I love P!nk” hehe I just had to smile knowing that her grandparents who were in on the surprise did their homework well. The cake was perfect for this funky gorgeous little girl.
This all would not have happened without the amazing behind scene’s work done by Dalas and Karri at Make A Wish, Riverland branch so a huge thank you for helping me give my gift. Thank you also to Caitie’s Parent’s and Grandparents , friends and family for making us feel so welcome in your home today. Xx Tina and family, Sweet T & Cake

Lilac ad Ivory Soft Romance

Oh boy where do i start with this cake. This cake certainly turned out to be my drama Queen cake of the week.

It looked totally stunning but I was devasted!!. One of the tiers moved somehow in the car and squished the very bottom of the fondant causing a bulge :(. The cake was so freshly baked, I had to re bake (that’s a whole story on it’s own) that the ganache hadn’t set up underneath the fondant the best it could have but time was totally against me having 4 cakes this weekend. I have learnt a huge lesson from it. A HUGE lesson!!!. No one could actually tell, well I dont think they could :-) but I left the venue so upset. I took the photo with the cake leaning because I got myself so worked up that I thought the cake was just going to fall over and land on the floor!!! It didn’t just to let you know haha

Oh and also just a tip.

This cake was sitting in front of a god awful brown faux wood partition wall and the photos I took were horrid but we always have a white drop sheet in the car that my husband can hold up behind the cake for a photo. That way if the cake is sitting at the venue and the background just happens to be Ugly or the toliet sign lol (that has happened) you have a quick fix.

Usually I never stray away from fondant. It’s what I have been trying to get right for the 18mths Ive been a cake decorator but when the groom said he just hated the stuff and really wanted chocolate i though what the heck ill give it a go. Like all new techniques I haven’t tried I tired to find a youtube tutorial or something to steer me in the right direction but when I couldnt find anything it came down to good old winging it lol.

I was so pleased with how my shards turned out. I mean really freaking pleased haha. I tempered my chocolate and when I broke a piece and I heard that good old snap I nearly jumped for joy lol.

When I got back to the venue and the girls were putting the fresh flowers on and I got to see and photograph the finished product I was sooo happy with it big smiles :-) x

Yay!!. This was just a little 7 inch cake but I sure did have fun making all the little animals. I did have one mishap, the morning after I made the giraffe my daughter came in and said mum I like how you made the giraffe with it’s head down eating the leaves. WHAT!!!! it was standing up last night lol. Its neck broke and I had to make it again haha oh well you live and learn.

I hope you love it as much as I do. My kids didn’t want to part with this one they just kept coming back to have another look at all the little animals. xx

Chocolate Elegance

Boy oh Boy was this a challenge. This cake is based on an amazing design by Mitch Turner from the Little Venice cake Company and to be honest i cringed a little when i saw this was what Madelaine and John wanted lol.

How on Earth was i going to pull that off and then my determination set in haha and there was no way i wasnt going to give it ago.

The main problem i had with the cake was the modelling chocolate, I had never made it before let alone even attempting chocolate roses!!! It’s only two ingredients right?, How hard could it be? Agggghhhhhhhghhh darn that modelling chocolate haha. I realised then maybe i was watching lauren Kitchens youtube video “How NOT to make modelling chocolate” half asleep and thought it was “How to make it” bahahaha. Well anyway to cut to the chase i threw out (I mean ate lol) a lot of failed modelling chocolate and then Halleluleah i got the perfect modelling chocolate. It was totally PERFECT it had elasticity, it was smooth, shiny and just brilliant. My white chocolate wasnt as perfect but it was smooth and i still managed with it.

I was soooooo happy with how my roses turned out and literally had them arranged on that cake within 30mins. i was stressing about how to arrange them but it was simple. Once the modelling choc dryed out slightly and became harder i inserted a toothpick into the back of each bud, dip the end in a tiny bit of tempered chocolate and stuck them straight into the cake. The cake looked spectacular and those roses tasted great hehe. I toally ate one of the leftovers lol, Thanks for looking x Tina

I cant tell you how worried i was making this cake and how grateful i am for all the cake decorators that helped me with recipes for buttercream that were heat proof, well nothing is going to stand up to 45degrees in the sun but it was such a help thank you :-)))) x Tina

I never seem to see the potential risk that because I haven’t done it before I could totally stuff it up haha. I see it as an opportunity to further my skills and do something i haven’t tried yet. :-)
I think this cake looks small but it’s size is deceiving. It is a double barrel 10inch caramel mudcake, that is just over 8 Inches high. It was extremely fun to cover haha (NOT) and a 7 inch marble mud cake that is 4 inches high. It looked so stunning in the Venue and I cant believe i forgot my camera but i got these shots before we left home. thanks for looking x Tina

I mean I hadn’t even started baking it lol and kids being kids my whole three wanted to help so that added an extra hour to the task hehe and another hour to clean up the mess they make lol but all totally worth it to see the joy it brings to them and me when we bake together.
So needless to say I was up until 3:30 am trying to finish it. I think I started making the pixie fairy at about midnight and even though I was so tired today I felt sooo excited and happy when my daughter seen it and LOVED it. She was soo happy I made the fairy. She even asked me what time I got to bed lol, the sweet little thing, when I told her nearly 4am she said awe mum im sorry. I just laughed and told her if id stay up to finish a cake for someone i didnt know (even if they were paying for it) there was no way i wouldnt stay up for her. I designed this cake months and months ago it was so great to finally see it come together. It was my first time stenciling and THANK YOU!! Royal bakery for your stenciling tutorial. The photo of the cake was taken at the Venue It was a total fluke i got one that was decent haha. i had to transport the cake in two sections as it didnt fit in my car but it was very easy to asemble once i got to the venue. Thanks for looking and it has been a very exciting first week to my caking adventures :-)

She collects Porcelain Dolls and teddy bears and her favourite colours are Yellow and Pink. She also said she loves ribbon and flowers, so i literally covered all bases with this one :-). The porcelain doll was quite fun to make oh except when i dropped her head in a bowl of water haha. I hope she doesnt look to freak show. i have never done a real looking face i mostly stick to characters.

You may be thinking Hmmm why has Tina uploaded two different hello kitty cakes under the same cake.
Well, it is actually the same cake just the reversed side. Check out the other pic and you will see it really is just one cake. I just think it’s a totally cool idea. My inspiration came from none other than the lovely Lesley from Royal Bakery. You may or may not remember the cars/princess cake she did. I loved it personally and have wanted to do a two sided cake since and this week i finally got the chance. x Tina

Elvis is before my time so I had to go to google. I really liked the silhouettes I found so worked them into the design. The end result wasn’t to bad.
