Thanks everyone. Sandra, just be careful. I used hot Isomalt to glue in the rock candy pieces, managed to splash a tiny bit on my arm and have a blister this morning. Ouchie!

With good reason Sandra. I took a pulled and blown sugar class with Chef Ewald Notter in 2000 and I don’t think any student there got out without at least one burn blister. Wear cotton gloves or even double latex gloves when working with it.

Angel Cakes
Not difficult Angel but the candy is formed on string and it isn’t possible to get it all out. I cut it as close as possible to the candy and then turned each piece so it hopefully wouldn’t show.
