I have always substituted eggs with Ener-G or with applesauce when baking. My nephew has 5 major food allergies so we have to deal with this a lot. (Thankfully he is starting to overcome some of them) Any way, the eggs act as a leavening agent with cakes and most recipes call for 3 to 4 eggs so your best bet is to go with the Ener-G rather than the applesauce. If you are making cookies/muffins/pancakes/etc. then you can substitute the eggs for applesauce. You can find Ener-G at Whole Foods…Check on line to see who sells it near you though because you may find a store closer to you. Hope this helps.
