Hi, everybody,
I just got a big order for vanilla cupcakes for a baby shower. I have a recipe, but I was wondering if anybody had a great recipe for vanilla cupcakes – I’ve been trying to get my foot in the door at this community and this is my big chance – so I want to wow them with my cupcakes.
I need to have them all baked by this Thursday – so your quick response would be appreciated!

Italian Cream Cake
This is the best recipe for this cake I have ever tried. We eat it without icing all the time. It is just that good. Made some cupcakes just today. Mmmmm :)

2 CUPS SUGAR
1/2 CUP SHORTENING

2 cups self-rising flour
2 cups sugar
1 tsp soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cup wesson oil
3 cups carrots
5 eggs (separated)

I have always wanted to make chocolate mmf. I had a good recipe for basic mmf, so I knew I just had to play with it to get what I wanted. I purused the internet looking. I took what I liked best, used my basic recipe and tweaked it. Came up with a winner. It is positively yummy.
INGREDIENTS:
1 16 oz bag mini marshmallows
2 tblsp chocolate syrup…. like Hershey’s, or whatever brand you like

180g of chopped butter
250ml milk
165g caster sugar
2 tsp. vanilla essence

I searched everywhere for a chocolate ganache recipe using Andes mints and really never found a good one. So, I made my own. It set up to a very nice consistency for me and hopefully it will for anyone else who tries it. My husband’s birthdand and our anniversary (same day) is Friday and he has asked me to make him a pineapple cake – I’ve never made one and I’m looking for a good recipe that I’ll be able to stack.

This recipe was the sweet treat that my mom used to fill cream puffs with. When I started making cakes, I tried using it as a filling and it was a hit with my husband and family, so I’ve been using it for that purpose ever since.
