Sticky Chocolate Cake

This cake is super moist and has golden syrup to really add depth to the flavour. For best results, use the best quality ingredients you can find. I have had this recipe hand written into my cookbook after copying it out of one of mums books, its been around a loooong time, so dont know who gets original credit…but its super yummy!

8oz Self Raising Flour
4 Tablespoons Cocoa
4 oz sugar (1 cup)
2 tablespoons golden syrup
1 1/2 cups hot water
1 teaspoon bicarb soda
3oz butter (3 tablespoons)
vanilla essense

Sift dry ingredients into a large bowl.
Dissolve golden syrup in the hot water and add bicarb soda.
Melt butter.
Mix all wet ingredients into dry with a spoon. Do not over mix.
Cook in moderate oven for 45min or until a skewer comes out clean or without too much stickyness.
Cool in the pan for 10 min then turn out onto a cooling rack.
