My husband’s birthdand and our anniversary (same day) is Friday and he has asked me to make him a pineapple cake – I’ve never made one and I’m looking for a good recipe that I’ll be able to stack.
I’m trying to make him a beer mug, which will require stacking several 6” cakes – your “quick” help will be very appreciated.

This is not a scratch recipe, it’s a cake my mother made me as a child…she couldn’t bake. But you could use your own scratch yellow cake and give it a go. It is really yummy! If you want to really decorate this cake you could just do their frosting as the filling!

Here is the one I came up with:
It isn’t scratch either but it sure is delicious!
1 box Dunkin Hines pineapple cake
1 cup all purpose flour
1/4 cup sugar
1 box of white chocolate pudding or coconut cream pudding for a pina colada flair!
4 large eggs
1/2 cup oil
1 cup water
1 tbsp of vanilla extract or coconut extract
1cup sour cream
Mix all the dry ingredients with wire wisk in KA until well blended
Add all the wet ingredients minus the sour cream, mix only until all ingredients are blended
Now add the sour cream blend a little scrape sides the mix on med speed for 2 minutes.
I use Baker’s joy and bake at 325 for however long your size pan needs.
They come out dense and moist.
I’d love to know how it turns out if you try it!

DJ, why don’t you use your regular yellow cake recipe and use the pineapples juice as the liquid and add some pineapple extract to it? This should work well.

That sounds really good, Vany – I tried a spongy cake recipe that was really very simple – the taste is awesome, but I’m not sure about the texture. it turned out very different from any of the cakes I make. I will do it again, though!

I’ve made wasc pineapple cake before and it was super yummy!
White Almond Sour Cream Cake (WASC)
Ingredients •2 boxes white cake mix •2 cups all-purpose flour •2 cups granulated sugar •1 1/2 teas. salt •8 egg whites •2 2/3 cups pineapple juice •4 Tbls. vegetable oil •16 oz pineapple yogurt •4 tsp pineapple extract or use some lorann’s pineapple

You can take a favorite pound cake recipe (or box mix) or any vanilla cake recipe and add pineapple juice in place of the liquid.
