My personal version of "Black Forest"

“Recipe Black Forest” (my way):

For the base:
(Instead of the classic sponge cake with chocolate, I use as a basis a mudcake)

Mudcake chocolate:

250gr. of butter, diced
150gr. plain chocolate
400gr. sugar
250ml milk
100gr. unsweetened cocoa powder
200gr. flour
1/2 teaspoon of baking powder
3 eggs (medium)
Melt in a small saucepan over low heat, without boiling, butter, chocolate, sugar and milk. When they reach the consistency of a cream off and let it cool. Sifting, in the meantime, in the bowl of the mixer, the flour, baking powder, cocoa powder. Add in the planetary also the mixture previously prepared, operate and add the 3 eggs (one at a time), at which point let it work for 10/15 minutes. Pour into the mold and put in the oven. Cooking in the oven: 50 minutes at 175 degrees static and 15 minutes at 175 ° convection oven. The cooking depends on the oven you have, it is always the toothpick test.

For the filling:
Joining a part of custard and two parts whipped cream
(Custard:

4 egg yolks
40 grams of flour
100g of sugar
400 grams of milk
1 lemon

Heat the milk with the lemon peel (yellow part only) bringing almost
boil, intando beat the egg yolks with the sugar and stir in the flour, then pour slowly, while continuing to mix the milk with the lemon zest. Place the mixture on the stove over low heat and continue stirring until slowly will not form your sweet cream.
Let cool in a bowl and cover it with a foil to prevent the formation of the cuticle, once cooled remove the lemon peel and enjoy this cream that is a must in my family, handed down from my grandmother and my mom ^ _ ^)

Allow to cool the mudcake, and make it firm up a bit ’in the fridge (so it will cut better), cut it into three layers.
Wet (but a little) with a BATHING NUTELLA:
(Hot milk to which I add two or three tablespoons of Nutella and very little sugar)
and cherry syrup for each layer.
Stuff with cream and cherries whole or in pieces.

Garnish with whipped cream and chocolate shavings for a classic version, but if you want to use it as a base for cakes in pdz, stuccarla with a butter cream or dark chocolate ganache.

This cake is a calorie bomb, but anyone who has eaten he’s in love, it is an ecstasy for the palate … the combination of chocolate and cherries then is gorgeous! If you try it let me know how it went
