Healthy Chocolate Cake...Yes I said Healthy...it's actually tastes amazing...Yes Really..LOL

This is raw Vegan cake so it’s Wheat Free, Gluten Free, Egg Free, Dairy Free & Sugar Free(no added sugar but contains healthy sweetner from dates)

Now Ingredients:
Base
3.5 cups Walnuts (raw not the roasted salted)
3.5 cups Cashews (raw not the roasted salted)
2 cups Dates (ordinary dried no added sugar)
1 Tbsp Vanilla paste or extract (not essence)
6 Tbsp Coconut Oil (This is an oil that is very good for you)
24 Tbsp Cocoa
1Tbsp of the draind juice from the dates (further down you’ll see where this comes from)
Liquid Stevia to taste aprox 1/2tsp (Stevia is a natural sweetner you will find at health store)

Frosting
6 large Avocados (I use Hass)
8Tbsp Coconut Oil
1 cup Dates
16 Tbsp Cocoa
Liquid Stevia to taste aprox 1/4 -1/2 tsp

Method:
Soak your nuts in cold water overnight this removes the natural chemicals found on the nuts that stop them from germinating, they are then better for you also helps to soften
Soak both batches of dates in warm water overnight to soften
Drain all ingredients well rinse nuts under a little cold water
Place the walnuts into the food processor with 1 cup of the drained nuts and puree,
remove place in bowl then process the cashews with the remaining 1 cup dates
add the remaing ingredients for the base in with the pureed cashew mix and blend well,
remove and mix into the walnut mix

grease a loose bottom cake pan with a little coconut oil then press mix into pan
FROSTING:
Now in a clean food processor add the avocado flesh, the drained soaked 1 cup dates
and puree add the remaing ingredients & mix well
remove from processor and strain through a seive, I use a spatula to press it through (this just removes any little bits of date skin)

now spread over base
and chill for 2-3 hours slice with a hot knife, cake is best kept in the fridge this make a *’ wide by 4" high cake you can’t eat alot as it’s very rich but tastes yummy and with zero guilt YAY… I hope you enjoy

I am definitely going to try this one… Most of my cakes are healthy and I am always searching for good yummy healthy recipes.
Question: can I use Canola oil instead of coconut oil? Or is coconut a must?

Thanks All for your kind comment, Dina Coconut Oil is a must it’s Healthy & solidifys in fridge, You won’t put on weight using Coconut oil as it good for you, however the same cannot be said about Canola oil which is all Genically modified nowdays and will be stored as fat in the body asap, none of the ingredients can be exchanged for anything else in this recipe sorry

oops forgot to say Coconut oil not expensive, in NZ found quite often at New World supermarkets (or health store) you don’t have to buy the expensive Virgin Press, just the ordinary one, and try using it to fry in, you will never use another oil again, (doesn’t have a strong flavour) as it has the highest smoke point of anyone so it does not burn in the pan…Handy Tip for anyone who like cooking…ps…. I’m a Chef and use all the time

I thought this would be perfect for my nephew (he has major food allergies) until I saw the coconut oil…he is allergic to coconut. :/ Do you think there is absolutely nothing else that may work in place of coconut oil for this cake? Looks so good!

I used to be intolarent to coconut but I can have the oil (to scared to try normal coconut I vomit for an hour last time) maybe try a skin test ( I too have allergies ie Fish urrgh!!! die)
You could try using butter, ghee, it needs to be something that solidifies in the fridge as you keep this cake in the fridge, hope this helps maybe take recipe into a health store & ask then what would solidify like coconut oil
