Banana filling help !!!

I have a cake to make for this weekend and it’s with fresh banana filling do have to put something else so the bananas stay fresh and not go black ? And is it recommended to put the cake in the fridge after been done because of the banana if it’s cover with fondant ?

I would really appreciate some knowledge thank you :)

I personally would not put fresh banana in a fondant covered cake, because I believe it would need to be refrigerated… and I would not refrigerate a fondant cake. Some others have, though… if you check out the other blogs there is one that specifically addresses this issue. Your main worry, will be the icing “sweating”, when it is removed… good luck with it… there are some good hints on the other blog. I hope you find it helpful. Julez xxx

Have you considered making a banana cream filing? I never use fresh fruit in fondant covered cakes. A good cheat banana cream filling is a box of Banana pudding (jello) 1 cup of heavy whipping cream and 1 cup of milk.. whip it up till is stiffens up.. :)
