No Cholesterol Chocolate Cake - Suitable for vegans
- 1 1/2 cups of plain flour
- 1 cup of sugar
- 1 teaspoon bi-carb soda
- 1/2 cup cocoa powder
- vanilla seeds from 1/2 a vanilla pod
- 1 tablespoon apple cider vinegar
- 1/3 cup vegetable oil
- 1 cup water
Pre-heat oven to 180 degrees
grease a 8 inch cake pan
Combine the dry ingredients and make a well in the centre. Add vanilla, oil, vinegar mix on low speed to combine and then add water gradually until blended. Do not over mix.
Pour into prepared pan and baked covered with foil for approximately 35 – 45 minutes. When cake is done, more than likely it will have a dome on top. To eliminate this take a piece of paper towel, place on top of cake immediately after taking it from the oven and then with a slightly smaller tin press down on the cake to level it out and hold for 30 seconds. Now your cake is nice and even and you now have no waste to cut off. Cool in pan completely keeping the foil over the pan.
