Thank you so much for another wonderful and very useful tutorial! I do have a question this time. You suggest using 10% additional sugar to firm up the fondant. Would adding tylose work have the same result? I assume that there is a reason that you prefer using sugar. Again, thank you so very much, Chef Yener!
