Hi Rosie, thanks for sharing, this looks awesome and I’m going to try it this weekend! I have two questions though: am I right in understanding that you use the same cake mix for both the dots and the cake itself? and will the dots not get very dry as they’d be baked twice?

Hi Maccaliscious…..I’m assuming you’re the same Mac I’ve just messaged on FB. For the record though…..yes…it’s the same recipe and no…they don’t seem dry, as long as you don’t overbake them in the first place. xx

Hi, I’m going to attempt making the spotted Cake for my Grand daughters 1st Birthday on 1-11-14. I’m having trouble understanding how to make the Madeira cake eg. how much flour and stuff, how many batches…etc. Can regular cake mix be used if I can’t figure it out?

Hi Dje,
I find that some cake mixes are too thin…and the balls will just float. That’s why I recommend a thinker batter such as Madeira.
As stated….I just weigh the eggs…..and then that determines the weight of butter, sugar and self raising flour that I use. Half the weight of the eggs determines the amount of plain flour I use. So for instance …if I make a 4 egg mix….and the eggs weigh 250g….then I use 250g butter, 250g sugar, 250g self raising flour and 125g plain flour.
The amount of batter you need obviously depends on the size of tin that you use. x

Hi Rosie, how long did you bake the madeira cake for and what size tin did you use for yours? Do you omit the egg yolks to make the cake whiter? Thanks
