moretto chocolate stuffed with chocolate, cream, wafers cocoa, hazelnuts fresh chopped by hand and glazed with chocolate ganache. Sugar paste hand-made with honey

recipe hand-made sugar paste with honey
ingredients:
450 grams of icing sugar
50 grams of acacia honey ( the most liquid and clear that you can find )
8 grams of gelatin in sheets
30 grams of water
16 grams of butter

preparation:
Put in a pot 30 grams of water and add 8 g gelatin cut into small pieces .
Leave to soak for about 10 minutes and then add in the same pot , honey and butter .
Bring to the boil and stir constantly until all ingredients have dissolved , being careful not to get to the boil.
Allow to cool for a minute and then add it with the icing sugar which have previously sieved.
Process until the mixture is smooth and does not stick to the fingers more .
If necessary, add a pinch of powdered sugar but not too much , the risk is a sugar paste that crack and hard as a rock.
At this point the sugar paste is ready , take care to keep it well wrapped in transparent film both before and after it has been colored .
P.S. I have recently tried to add a little more butter and I would say that the result is good . especially for use colors soluble powder . Alternatively, the fat-soluble dyes melt them with a little melted butter before adding to the dough.
