So every year, for the past 4 years, I have made my Kung fu teacher a birthday cake. It’s so cool to see how much has changed and how much I’ve learnt about making cakes since then. We have such an abundance of knowledge and skill from around the world available at our finger tips in this day and age, I mean, there are so many cake decorators out there that have become the most amazing cake artists with no Pastry chef backgrounds etc. It’s so awesome to see.
This cake was a high pressure cake, the last one I made was a replica of the mask we use in our Shun Wu Tang Lion dance, and it was a huge hit. The whole school had to pose with it! Needless to say it was the most fun I’ve gotten out of a cake…
So this cake was a bit more of an experimental cake. I piped the dragon out of red coloured white chocolate and covered it in yellow- white choc. The collar for the cake was interesting to make as I used 2 techniques of adding the chocolate to my baking paper. The end result having a very cool textured appearance. I then brushed it with thinned out edible gold colouring. It’s the most different cake I’ve made to date and with only chocolate, dark choc fudge cake and berry infused cream it was a very tasty and decadent cake.
