Today’s wedding cake has been a bit of a lesson in the life of wedding cake making.

Never before have I underestimated the difficulties the colour of a cake can cause!

This week started off pretty humid anyway which made covering the cakes a little more tricky as the buttercream didn’t seem to stay chilled for long. Then there was this oh so deep blue that had to be just right. I am quite particular about the flavour of the fondant I use being good as well as the quality and so I very rarely by precoloured fondant and choose to colour myself. BIG mistake! The fondant lost all it’s strength and just kept tearing on the rather pointed corners of the cake. Anyhow, hydrangeas and small blossoms saved the day and I actually ended up producing a very pretty cake :-)

You would never know you had any difficulty! It turned out amazing! Your flowers and figures are perfect! I am working on making a deep shade of blue for a cake for my grandson’s 5th birthday party tomorrow. First it was too dark, then it was too light. I also color and make my own fondant, so now my hands look like they are black and blue! LOL!
